Torrone is the sweet that must be on the table after dinners and lunches around Christmas. It is often enjoyed with dried figs and dates, or with mandarins.
Mainly made with hazelnuts or almonds, Torrone is a sweet that pleases young and old alike.
After the holidays, if any are left in the pantry, they can be used as an ingredient in many desserts like semifreddos, cheesecake or Charlottes.

Typically made with egg white, honey and roasted or candied nuts, the origins of Torrone can be traced back to ancient times when dried fruit and honey mixture was used as an 'energy bar' by Greek athletes.
During the rise of Rome, we also know that the Samnites prepared a popular version which was similar but crunchy.
Many link nougat to the Arab traders who commercialized almonds and honey across the Mediterranean Sea while others say Torrone hails from Spain and, more precisely, the territory of Alicante. Indeed, the name itself seems to be derived from the Spanish turrón meaning to toast or roast.
What is for sure is that over the centuries this delicious speciality eventually made its way onto the tables of Kings, Queens and even Popes.
Torrone is now produced all over Italy albeit with slight variations from region to region.
